A Neapolitan-style pizzeria is coming to Capitol Hill in Burnaby.
Cotto Enoteca Pizzeria will be opening at 6011 Hastings St., where Anducci's restaurant was located.
Anducci's suffered exterior and interior damage from a late night fire last October and has been closed since then.
Alex Tung, executive chef and managing partner of Cotto Enoteca, is working in partnership with the previous owner of Anducci's, Andy Mollica, he said in a phone interview Wednesday.
"It's a really different concept," Tung said of the restaurant, adding that the two have been collaborating on the project for the past month and a half."
They are finishing up construction in the restaurant, Tung said, and are sourcing suppliers and finishing up the wine program.
"We have to build the kitchen again from scratch, so there's lots and lots and lots of work to do," he said.
They hope to open in July, he added.
The restaurant will serve food that uses ingredients from B.C. with traditional Italian techniques, according to Tung.
"It's going to be a modern approach to Italian food, specializing in the best of B.C. ingredients treated in a traditional way," he said.
This includes wood-fired Neapolitan-style pizzas, he added.
Tung plans to use many of his own ingredients, including in-house mozzarella and ricotta, he said.
The wine menu will include specialty wines from B.C. and Italy, and the cocktail list includes Italian inspired offerings.
Tung, who lives in nearby Coquitlam, was the executive chef at Tapenade Bistro in Steveston, Richmond, for six years.
Before that he worked at restaurants in Vancouver; Toronto, Ont.; London, England; and New York. Tung trained at the New England Culinary Institute.
